Blackberry Buckle
- 1 c. flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. butter or margarine
- 1/2 c. sugar
- 1 egg
- 1/3 c. milk
- 2 1/2 c. unsweetened blackberries
- 1/4 c. sugar
- 1/4 c. flour
- 1/2 tsp. cinnamon
- 3 Tbsp. butter or margarine
- 1 tsp. vanilla
- Sift together 1 cup flour, baking powder and salt; set aside. In mixer bowl beat together 1/2 cup butter and 1/2 cup sugar until fluffy.
- Add egg and beat until smooth.
- Combine milk and vanilla in separate container.
- Add dry ingredients and milk alternately to the beaten mixture.
- Pour into a greased and floured 1 1/2-quart oval baking dish.
- Spoon berries evenly over batter. Combine 1/4 cup sugar, 1/4 cup flour and 1/2 teaspoon cinnamon. Cut in 3 tablespoons butter until crumbly.
- Sprinkle over berries. Bake in 375u0b0 oven for 35 to 40 minutes.
- You may substitute other berries or fruit.
