Bobbi'S Lima Bean Casserole
- 1 pkg. frozen lima beans
- 2 or 3 slices bread
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 egg
- 1 clove garlic
- 1 lb. ground beef
- 4 Tbsp. butter
- 1/2 c. water
- 1 c. sour cream
- Heat oven to 350u0b0.
- Cook beans according to package.
- Drain. Soak bread in milk.
- In separate bowl, mix salt, egg and finely chopped garlic.
- Squeeze extra milk out of bread.
- Mix with meat and egg mixture with fork gently.
- Shape into walnut size meatballs.
- Fry in 1 tablespoon butter until browned.
- Transfer to bottom of casserole dish.
- Pour water into skillet.
- Stir and pour over meatballs.
- Season beans with salt, pepper and butter. Pour over meatballs.
- Bake 30 minutes.
- Spoon sour cream over casserole.
- Bake another 5 minutes.
- Sprinkle top with paprika.
