Turkey Chili
- 2 Tbsp. oil
- 1 chopped onion
- 1 diced green pepper
- 3 cloves chopped garlic
- 2 lb. ground turkey
- 3 Tbsp. chili powder
- 1 1/2 tsp. cumin
- salt to taste
- 1 tsp. oregano
- 1 (4 oz.) can chopped green chilies (optional)
- 1 can whole tomatoes, chopped
- 2 Tbsp. tomato paste
- 1 c. chicken broth
- 1 can kidney beans, rinsed and drained
- Saute onion, pepper and garlic in oil about 6 minutes; then add turkey and cook until browned.
- Add to mixture and cook 1 minute the chili powder, cumin and oregano.
- Next add green chilies, tomatoes, tomato paste, broth, beans and salt.
- Simmer until serving time.
- Best served on rice with grated cheese on top, if desired.
