Crab Stuffed Manicotti
- 1 pkg. manicotti, cooked and drained
- 1 lb. shredded Mozzarella
- 1/2 c. grated Parmesan
- 16 oz. Ricotta cheese
- 8 oz. imitation crab legs, chopped (Sea Stix or Crab Delights)
- 3 eggs
- 1 tsp. garlic salt
- 1 Tbsp. dehydrated onion
- 1 Tbsp. parsley flakes
- 1 lb. fresh mushrooms, sliced
- 1 stick butter, melted
- 1/4 c. chopped pimento
- Combine cheese, eggs, garlic salt, onion and parsley in a large bowl.
- Stir in crabmeat.
- Carefully stuff filling into cooked manicotti shells.
- Arrange stuffed manicotti in a baking pan.
- Melt butter and slightly cook mushrooms in butter; add pimento.
- Pour this over manicotti, making sure to cover all with butter.
- Bake in 350u0b0 oven for 45 to 50 minutes.
- Let stand 5 minutes before serving.
