Nif'S Pork & Cranberry Meatballs
- 2 teaspoons garlic, minced
- 1 teaspoon rosemary, dried
- 2 teaspoons olive oil
- 1 teaspoon sea salt
- 1 teaspoon pepper, freshly ground
- 1 tablespoon whole grain mustard
- 2 lbs lean pork, ground
- 1/2 cup breadcrumbs
- 3 egg whites
- 2/3 cup dried cranberries, roughly chopped
- Stir together garlic, rosemary, olive oil, salt and pepper. If you can make it into a paste (with a mortar and pestle or mash together with the back of a spoon), that's even better.
- In a large bowl, combine everything with your hands. Work ingredients until the are completely mixed. Make into approximately 30 meatballs.
- You can cook these in a nonstick pan or in the oven at 350F until cooked through, internal temperature being 160u0b0F . The time depends on how big you make your meatballs.
