Easter Nests

  1. Stir together sugar and coconut; set aside.
  2. Microwave chocolate in a 1-qt. bowl on High for 1 1/2 minutes, stirring twice; cool.
  3. Whisk together egg whites, vanilla and salt.
  4. Stir in melted chocolate and add this to coconut mixture, stirring well.
  5. Drop by heaping tablespoons 2 inches apart onto a lightly greased, parchment paper lined baking sheet.
  6. Make an indentation in the middle of each mound with thumb to form a nest.
  7. Bake at 350 degrees for 14 minutes or until bottoms are crisp.
  8. Centers will be soft.
  9. Press 3 jelly beans into the center of each nest and cool for 10 minutes on baking sheet.
  10. Remove to wire racks to cool completely.
  11. Store in air-tight container.
