Easter Nests
- 7 oz. bag sweetened coconut
- 3 Tbsp. sugar
- 2/3 c. semi-sweet chocolate morsels
- 2 egg whites
- 1 tsp. vanilla
- 1/8 tsp. salt
- 60 pastel jelly beans
- Stir together sugar and coconut; set aside.
- Microwave chocolate in a 1-qt. bowl on High for 1 1/2 minutes, stirring twice; cool.
- Whisk together egg whites, vanilla and salt.
- Stir in melted chocolate and add this to coconut mixture, stirring well.
- Drop by heaping tablespoons 2 inches apart onto a lightly greased, parchment paper lined baking sheet.
- Make an indentation in the middle of each mound with thumb to form a nest.
- Bake at 350 degrees for 14 minutes or until bottoms are crisp.
- Centers will be soft.
- Press 3 jelly beans into the center of each nest and cool for 10 minutes on baking sheet.
- Remove to wire racks to cool completely.
- Store in air-tight container.
