Pepe'S Favorite Chili
- 2 Tbsp. vegetable oil
- 1 large onion, chopped
- 2 stalks celery, chopped
- 1 large green pepper, chopped
- 3 cloves garlic, minced
- 3 lb. coarse ground round steak
- 1 (6 oz.) can tomato paste
- 1 (16 oz.) can stewed tomatoes
- 3 (6 oz.) cans tomato sauce
- 3 (16 oz.) cans red kidney beans, drained
- 1 (4 oz.) can diced green, mild chiles
- 1 (12 oz.) can beer
- 6 tsp. chili powder
- 1 Tbsp. salt
- 1 jalapeno pepper, chopped and seeded
- 1 tsp. oregano
- pinch of cayenne
- 1/2 tsp. cumin
- Heat oil in large pot.
- Cook onion, celery, green pepper and garlic until soft.
- In separate skillet, brown meat; drain off fat.
- Combine meat with vegetables in pot.
- Add remaining ingredients; cover and cook over low heat for 2 to 3 hours.
- Stir every 10 to 15 minutes to prevent burning.
- A spicy chili that is easy to make.
