Catadoori Chicken And Fruited Rice

  1. Unroll chicken breast fillets; remove skin.
  2. In a 10-inch skillet, melt butter over low heat; add curry powder, onion and salt.
  3. Cook, stirring, for 1 minute.
  4. Stir in 1 tablespoon curry mixture into yogurt; set aside.
  5. Cook chicken fillets in curry mixture remaining in a skillet 2 minutes, turning once.
  6. Add water and fruit; heat to boiling, stirring.
  7. Reduce heat, cover and simmer 8 minutes or until chicken is fork-tender.
  8. Sprinkle rice into liquid around chicken; remove from heat.
  9. Cover and let stand 5 minutes.
  10. Serve with green beans.
  11. Serves 2.
