Cucumber-Feta Salsa With Pita Chips
- PITA CHIPS
- 3 (8 inch) pita bread, split in half
- cooking spray
- 1/4 teaspoon salt
- SALSA
- 1 cup crumbled feta cheese
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon fresh ground black pepper
- 1 1/2 cups cubed seeded peeled cucumbers
- 1 cup finely chopped red onion
- 3 tablespoons chopped of fresh mint
- 3 tablespoons chopped fresh dill
- 8 lemon wedges
- Preheat oven to 350u0b0F.
- To prepare pita chips, cut each pita half into 8 wedges.
- Arragne wedges in a single layer on a baking sheet coated with cooking spray.
- Lightly coat pita wedges with cooking spray; sprinkle with salt.
- Bake at 350 degrees for 10 minutes or until crisp.
- To prepare salsa, combine feta cheese, juice, and pepper; partially mash with fork.
- Add cucumber, onion, mint, and dill.
- Serve salsa with pita chips and lemon wedges.
