Wesson Oil Fruit Cake
- 4 c. flour
- 1 tsp. soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. cloves
- 1/2 tsp. nutmeg
- 2 c. chopped mixed fruits
- 1 c. chopped dates
- 1 c. chopped candied cherries
- 1 c. chopped pecans
- 1 c. chopped walnuts
- 1 c. white raisins
- 1/2 c. chopped pineapple
- 1/2 c. chopped candied lemon peel
- 1/2 c. chopped citron
- 1 c. Wesson oil
- 2 c. sugar
- 6 eggs
- 1 1/2 c. buttermilk
- Sift together first 6 ingredients and set aside.
- Combine next 4 ingredients in a large bowl.
- Mix well.
- Add 1 cup of the flour mixture.
- Combine Wesson oil and sugar; beat until light.
- Add eggs, 1 at a time.
- Beat until light and fluffy.
- Add dry ingredients alternately with 1 1/2 cups buttermilk.
- Beat until smooth.
- Add fruit-nut mixture.
- Pour into a greased tube pan. Bake at 300u0b0 for 2 hours.
- Decorate top of cake with candied fruit. Makes 1 tube cake.
