Spinach-Onion Soup

  1. In a pot dissolve 1 bouillon cube in 1 cup boiling water.
  2. Add frozen spinach, cook until done.
  3. Drain spinach, reserving liquid.
  4. In a frying pan combine butter, onions and garlic.
  5. Cook slowly for 10 minutes.
  6. Add spinach.
  7. Cook, stirring constantly, for 3 minutes.
  8. Add spinach liquid.
  9. In a bowl dissolve remaining bouillon cubes in remaining boiling water.
  10. Add mixture to pot.
  11. Add pepper and salt.
  12. Bring to a boil.
  13. Reduce heat.
  14. Cook for 15 minutes longer.
  15. Garnish with nutmeg.
