Seven Layer Casserole
- 1 c. uncooked long grain white rice
- 1 c. canned whole kernel corn, drained
- 2 (8 oz.) cans tomato sauce
- 1/2 c. finely chopped onion
- 1/2 c. finely chopped green pepper
- 3/4 lb. ground chuck, browned and drained
- 4 oz. water
- 2 oz. water
- 4 strips bacon
- salt and pepper
- Preheat oven to moderate (350u0b0). Place above ingredients in a 2-quart baking dish with tight-fitting lid.
- Layer ingredients in this order: rice, corn, sprinkle of salt and pepper, 1 can tomato sauce, 4 ounces water, chopped onion, chopped green pepper, ground beef, sprinkle of salt and pepper again, second can of tomato sauce, 2 ounces water and cover with bacon strips, cut in half. Bake, covered, one hour.
- Uncover and bake 30 minutes longer, until bacon is crisp.
- Makes 6 servings.
