Baked Deviled Orange Roughy(Yields 4 Servings)
- 1 1/2 lb. frozen orange roughy fillets or other white fillets (1/2-inch thick)
- 8 oz. pkg. cream cheese, softened
- 2 Tbsp. mayonnaise or salad dressing
- 2 Tbsp. milk
- 1 Tbsp. dry onion soup mix
- 1 Tbsp. lemon juice
- 1 tsp. dried tarragon
- 1 tsp. Dijon-style mustard
- 1 1/2 c. soft wheat bread crumbs
- 1 c. snipped parsley
- 1/2 c. grated Parmesan cheese
- Thaw fish, if frozen.
- Cut fillets into 6 serving size portions.
- Arrange fillets in a single layer in a greased shallow baking pan.
- In small bowl, combine cream cheese, mayo, milk, onion soup mix, lemon juice, tarragon and mustard.
- Spread cream cheese mixture atop fillets.
- Bake in 450u0b0 oven for 10 to 12 minutes or until fish almost flakes with a fork.
- Meanwhile, combine bread crumbs, parsley, Parmesan cheese and paprika; sprinkle atop filets. Bake 3 to 4 minutes more or until crumbs are golden and fish flakes easily with a fork.
