Rock Cornish Hens
- 3 c. water
- 1 tsp. salt
- 1 c. wild rice
- 1/2 c. butter
- 2 Tbsp. finely chopped onions
- 3 tsp. salt
- 1/2 c. sliced, cooked mushrooms
- 1/2 c. American Blue cheese (about 3 oz.)
- 6 Rock Cornish game hens
- 1/3 c. butter, melted
- Bring water to a boil.
- Wash rice several times and add to boiling water.
- Cover and simmer for 1 hour without stirring until tender; drain if necessary.
- Melt 1/2 cup butter.
- Saute onions and mushrooms in melted butter until lightly browned.
- Toss lightly with wild rice and American cheese.
- Rinse hens with water and pat dry.
- Rub cavity with salt.
- Fill lightly with wild rice mixture.
- To close cavity, sew or skewer and lace with cord.
- Tie legs together.
- Brush with 1/3 cup melted butter.
- Roast, uncovered, at 350u0b0 for 1 hour or until done.
- Serves 6.
