Potato Corn Bake

  1. Cook bacon until crisp; drain and set aside.
  2. In a large skillet, saute onion and green pepper in 1 tablespoon reserved bacon fat for 1-2 minutes; add corn, milk, butter, salt, and pepper and cook, stirring frequently, over medium heat until bubbly.
  3. Remove skillet from heat; stir in potato flakes and sour cream.
  4. Turn contents of skillet into a 9" square baking dish that has been coated with no-stick cooking spray.
  5. Top with bacon, parmesan cheese, and optional green onions.
  6. Bake at 375u0b0 for 20-25 minutes.
