Golden Upside-Down Snack Bread(Coffee Cake)
- 1/2 c brown sugar, packed
- 1/3 c. slivered almonds
- 1/2 c. coconut
- 1 (29 oz.) can peach or apricot halves, drained
- 2 c. biscuit mix
- 1 c. sour cream
- 1/4 c. sugar
- 2 Tbsp. margarine, melted
- 1 egg
- dash of lemon juice
- Grease a round 9 x 1 1/2-inch layer pan with shortening or margarine. Sprinkle bottom with brown sugar, almonds and coconut. Arrange fruit on top of sprinkled combination.
- Stir biscuit mix, sour cream, sugar, melted margarine, egg and lemon juice in mixing bowl just until blended.
- Beat well for about 30 seconds. Spread mixture evenly over fruit and bake in hot oven at 400u0b0 for 20 to 25 minutes. Cool 5 minutes; turn out onto serving plate.
- Serve with vanilla ice cream, if desired.
- Makes 6 to 8 servings.
