Pasta Fagioli Soup(Country: Italian)
- 1 Tbsp. olive oil
- 2 cloves garlic, crushed
- 2 (14 oz.) cans cannellini beans
- 2 c. spaghetti sauce (canned or homemade)
- 1 medium onion, chopped
- 1/2 c. sliced mushrooms
- 2 Tbsp. parsley, chopped
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. oregano
- 1/4 tsp. rosemary
- 1/2 c. cooked ditalini pasta or small pasta
- 1/2 c. Parmesan cheese
- 1 to 2 c. water (if needed)
- Saute garlic and onions in olive oil in a large sauce or soup pan until soft.
- Add beans, spaghetti sauce, mushrooms, parsley, salt, pepper, oregano and rosemary.
- Simmer for 1 hour, covered. Cook pasta for 8 to 10 minutes in boiling water and add small amounts at a time.
- Add Parmesan cheese.
- If soup is too thick, add water.
- Makes 10 to 12 servings.
