Shrimp Or Scallop Scampi Genovese
- 1 1/4 lb. uncooked shrimp or scallops
- 1/3 c. olive oil
- 4 oz. tomato sauce
- 3 Tbsp. fresh parsley, chopped
- 1 bay leaf
- 3 or 4 cloves garlic, chopped
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 lb. angel hair or thin spaghetti
- Shell and devein shrimp.
- If scallops are large, cut in half. Begin heating the water and plan to have the pasta ready when the scampi is finished.
- Heat olive oil in a large frying pan over medium heat.
- Add the chopped garlic and saute lightly until slightly golden.
- Add the tomato sauce, parsley, bay leaf, salt and pepper.
- Simmer for 5 minutes.
- Add the shrimp or scallops and simmer for 6 to 8 minutes or until cooked.
- Do not over cook or they will be tough.
- Serve over the pasta.
- Serves 4.
