Seafood Roll-Ups

  1. Thaw fish, if frozen.
  2. Cut fish into 4 portions.
  3. Make 4 rectangles.
  4. In a bowl, combine cheese, chives, pimento, salt and pepper. Spread the mixture on the fish. Roll up fillets around filling.
  5. Place seam side down in a loaf pan that has been sprayed with nonstick vegetable spray.
  6. Combine the bread crumbs and paprika.
  7. Brush fish with the 1 tablespoon yogurt and sprinkle with the bread crumb mixture. Bake in a 350u0b0 oven for 20 to 30 minutes or until the fish flakes easily when tested with a fork.
