Seafood Roll-Ups
- 1 lb. flounder or sole
- 1/2 c. shredded Swiss cheese
- 1 (2 1/2 oz.) jar sliced mushrooms, drained
- 1/4 c. low-fat yogurt
- 1 Tbsp. chives
- 1 Tbsp. chopped pimento
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 Tbsp. bread crumbs
- 1/4 tsp. paprika
- 1 Tbsp. plain low-fat yogurt
- Thaw fish, if frozen.
- Cut fish into 4 portions.
- Make 4 rectangles.
- In a bowl, combine cheese, chives, pimento, salt and pepper. Spread the mixture on the fish. Roll up fillets around filling.
- Place seam side down in a loaf pan that has been sprayed with nonstick vegetable spray.
- Combine the bread crumbs and paprika.
- Brush fish with the 1 tablespoon yogurt and sprinkle with the bread crumb mixture. Bake in a 350u0b0 oven for 20 to 30 minutes or until the fish flakes easily when tested with a fork.
