Nasi Goreng(Indonesian Fried Rice)
- 1 lb. ground chuck
- 1/4 c. dried bread crumbs
- 2 eggs (unbeaten)
- 2 c. chopped onions
- 3 tsp. salt
- 1/2 tsp. pepper
- 6 Tbsp. butter
- 2 c. diced celery
- 4 Tbsp. salad oil
- 1 lb. fresh shrimp, shelled and deveined
- 2 to 3 Tbsp. curry powder
- 4 c. chicken broth
- 4 c. precooked rice (packaged)
- Combine chuck, bread crumbs, eggs, 1/2 cup onions, salt and pepper.
- Form into tiny meat balls; set aside.
- In large Dutch oven, melt 3 tablespoons butter.
- Add 1 1/2 cups onions and celery; saute until golden.
- Remove from pan.
- In same pan, brown meat balls, keeping them round by rotating pan.
- Melt 3 tablespoons butter.
- Add curry, 2 teaspoons salt, 1/4 teaspoon pepper and broth; bring to boil.
- Add rice; cover, remove from heat and let stand 5 minutes.
- Add celery-onion mixture, shrimp and rice to meat balls in pan.
- Cover; heat until hot.
- Serve in same Dutch oven or heaped on platter.
- Serves 8 to 10.
