Refrigerator Rolls
- 2 c. compressed yeast
- 1/4 c. lukewarm water
- 2 eggs
- 7 c. flour
- 2 c. boiling water
- 1/2 c. sugar
- 2 tsp. salt
- 3 Tbsp. shortening
- Crumble yeast into the lukewarm water.
- Pour boiling water over sugar, salt and shortening; cool until lukewarm.
- Then add yeast and beaten eggs; mix well.
- Add about 4 or 5 cups of flour. Beat thoroughly, then add 2 to 3 cups of flour and knead (with hands) until the flour is worked into the dough.
- Place in a greased mixing bowl; cover well with heavy wax paper and place in refrigerator.
- After 2 hours, take out and allow to double in size in warm place.
- Knead down and let rise again.
- Make rolls by hand and place on greased cookie sheet.
- Allow to rise for 1 hour. Bake at 350u0b0 until done.
