Peanut Butter Divinity Roll
- 2 1/2 c. white sugar
- 2 Tbsp. Karo syrup (white)
- 2 Tbsp. vinegar
- 1/2 c. water
- 1 egg white, beaten
- 1 tsp. vanilla
- 2 Tbsp. marshmallow cream
- dash of salt
- peanut butter
- Mix sugar, syrup, vinegar and water. Cook on high until mixture forms soft ball when dropped in cold water.
- Remove from heat and add gradually to beaten egg white (beaten stiff).
- Add marshmallow cream, salt and vanilla.
- Continue beating until stiff.
- Pour onto greased surface.
- Roll or pat out. Spread with peanut butter. Roll as jelly roll.
- Cut into 3 small rolls and chill in refrigerator.
- Slice.
- Instead of greased surface you can dust a pastry cloth well with powdered sugar.
- Pour divinity out on it.
- It makes it easier to handle.
