Mexican Pie
- 1 lb. smoked sausage links
- 1/2 c. chopped onions
- 2 Tbsp. butter or margarine
- 1 can condensed tomato soup (10 3/4 oz.)
- 1 can condensed chili beef soup (11 1/4 oz.)
- 1 (9 oz.) pkg. frozen cut green beans, cooked and drained
- 1/4 c. water
- 1/4 c. vegetable oil
- 1 c. yellow corn meal
- 1 c. all-purpose flour
- 1/2 tsp. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1 c. milk
- 1 egg
- Mix oil, cornmeal, flour, sugar, baking powder, salt, milk and egg in a mixing bowl and set aside.
- In skillet, brown sausage, beans and water; bring to boil.
- Pour into 2-quart shallow baking dish (12 x 8 x 2-inch).
- Spoon corn meal mixture around edge of baking dish (evenly).
- Bake at 400u0b0 for 20 minutes or until done. Makes about 5 1/2 cups.
