New Potatoes With Lemon Thyme Dressing
- 2 lbs new potatoes, unpeeled
- Dressing
- 3 tablespoons white wine vinegar
- 1 tablespoon lemon juice
- 2 teaspoons Dijon mustard
- 1 shallot, minced
- 6 scallions, white part only, chopped (reserve tops for garnish)
- 2 tablespoons chopped lemon thyme
- 1/4 cup chopped parsley
- 3 tablespoons vegetable oil
- 3 tablespoons olive oil
- salt & freshly ground black pepper
- Garnish
- paprika
- sliced scallion top
- Steam or cook potatoes until just tender.
- Cool slightly and slice into quarters or chunks, and place in a serving bowl.
- Combine dressing ingredients, whisking in oils gradually until thoroughly blended.
- Pour dressing over warm potatoes, tossing gently until combined.
- Sprinkle potatoes with paprika and scallion tops.
