Seafood Okra Gumbo
- 2 lb. fresh okra, sliced
- 1 large onion, chopped
- 1 green pepper, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, chopped
- 1 Tbsp. flour
- 1 (8 oz.) can tomato sauce
- 2 lb. raw shrimp
- 2 c. crabmeat
- 1 pt. oysters
- 2 bay leaves
- 1 tsp. crab boil liquid
- 1/2 c. oil
- 8 c. hot water or more
- salt to taste
- Saute the onion and okra in 1/4 cup oil until they are wilted. Add green pepper, celery and garlic; stir them until they are wilted.
- In a skillet, add 2 tablespoons oil with flour.
- Cook until brown.
- Add to okra mixture.
- Saute shrimp with remaining oil for about 10 minutes.
- Add shrimp, oysters, bay leaves, crab boil, salt, tomato sauce and water.
- Cook slowly for about 45 minutes.
- Remove from heat.
- Add crabmeat.
- Serve over rice.
