Caraway Rye Rolls No Knead

  1. In a large mixing bowl dissolve the yeast in the warm water.
  2. Add the cottage cheese, sugar, eggs, caraway seeds, salt, baking soda, rye flour and 1 c all purpose flour, mix well.
  3. Stir in enough remaining flour to form a sticky batter, do not knead.
  4. Cover and let rise until doubled, about 1 hour.
  5. Stir dough down.
  6. Turn onto a lightly floured surface, divide into 24 pieces.
  7. Place in well greased muffin cups. Cover and let rise until doubled, about 35 minutes.
  8. Bake in a preheated 350 oven for 18-20 minutes or until golden brown.
  9. Cool for 1 minute before removing from pans. Cool on wire racks.
