Cajun Style Beans, Rice And Ham
- 1 (48 oz.) jar Randall's pinto beans
- 5 Tbsp. butter or margarine
- 1 c. chopped onion
- 1/2 c. chopped green pepper
- 1 c. chopped green onion
- 1 tsp. finely minced garlic
- 1 tsp. salt
- 1/2 tsp. black pepper
- 2 bay leaves
- 1/4 tsp. dry basil
- 1/4 tsp. hot red pepper sauce
- 3 c. chicken broth
- 3 c. cubed smoked ham
- 6 to 8 c. cooked long grain rice
- In large pot, melt margarine.
- Add onion, 1/2 cup of the green onion, green pepper and garlic.
- Cook about 5 minutes until soft, stirring frequently.
- Add chicken broth, beans, salt, pepper, bay leaves, basil, hot sauce and ham.
- Simmer 30 to 45 minutes, stirring often.
- At end of cooking time, mash some of the softest beans against the side of pan to form a thick sauce.
