Pineapple Crisp Coffee Cake
- 1 1/2 c. Kellogg's corn flakes cereal
- 2 Tbsp. regular margarine
- 1/4 c. sugar
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 1/2 c. regular all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 c. margarine, softened
- 3/4 c. sugar
- 1 (8 1/4 oz.) can crushed pineapple, well drained (keep syrup)
- 1 egg
- 1/4 c. flaked coconut
- 1/4 c. halved maraschino cherries
- Measure corn flakes and crush to measure to 3/4 cup.
- Set aside.
- Measure 2 tablespoons margarine, sugar, the cinnamon and nutmeg into small saucepan.
- Cook over low heat, stirring constantly, until mixture boils.
- Remove from heat.
- Add crushed cereal and mix well.
- Set aside for topping.
