Pepper Steak

  1. While rice is cooking, pound meat to 1/4-inch thick and cut to 1/2-inch wide strips.
  2. Sprinkle meat with paprika and allow to stand while preparing other ingredients.
  3. Using a large skillet, brown meat in butter.
  4. Add garlic; cover and simmer.
  5. Stir in onions and green peppers for five minutes more.
  6. Blend in cornstarch, water and soy sauce.
  7. Stir into meat mixture.
  8. Cook, stirring until clear and thickened (about 2 minutes).
  9. Add tomatoes and stir gently.
  10. Serve over rice.
