Chicken Artichoke Casserole
- 1 24 oz. jar marinated artichokes
- 4 c. diced cooked chicken breasts
- 2 c. cream of chicken soup
- 1/2 c. milk
- 1 c. mayonnaise
- 1 tsp. lemon juice
- 1/2 tsp. curry powder
- 1 1/4 c. grated cheese (divided)
- 1/2 lb. mushrooms, sliced
- 2 c. cooked rice
- 1/4 c. seasoned bread crumbs
- 2 Tbsp. melted butter
- parmesan cheese
- Drain artichokes.
- Place in greased 9 x 13 dish.
- Layer rice and chicken over artichokes. Mix soup, milk, mayonnaise, lemon juice, curry and 3/4 of cheese together.
- Pour over chicken and sprinkle with remaining cheese.
- Toast bread crumbs in melted butter, toss with parmesan cheese and sprinkle on top of casserole.
- Bake 350 for 35 minutes.
- Serves 8 - 10.
