Grilled Chicken Breasts With Satay Sauce
- 2 teaspoons light brown sugar
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon grated lime rind
- 1/2 teaspoon kosher salt
- 4 skinless noneless chicken breast halves
- cooking spray
- 1/4 cup creamy peanut butter
- 1 1/2 tablespoons rice vinegar
- 1 tablespoon water
- 1 tablespoon canola oil
- 2 teaspoons chili sauce
- 1 teaspoon minced and peeled fresh garlic
- 1 garlic clove
- 1/4 cup cilantro leaf
- Combine first 5 ingredients in a bowl. Rub spice mixture evenly over chicken. Heat a grill pan over medium-high. Coat pan with cooking spray. Add chicken to pan; cook 5 minutes. Cut into slices.
- Combine peanut butter and next 6 ingredients (through garlic) in a bowl, stirring with a whisk. Spoon. Peanut butter mixture over chicken. Sprinkle with cilantro.
