Uniquely Yours Chicken Casserole
- 4 vegetarian chickens, cooked and cut into bite size (frozen chix is better than canned)
- 1 pkg. Uncle Ben's white and wild rice pilaf, cooked to directions
- 2 ribs celery, chopped
- 1/2 onion, chopped
- 1/2 lb. mushrooms, sliced
- 2 Tbsp. butter or margarine
- 1 1/2 c. sharp Cheddar cheese, grated
- 3/4 c. soft bread crumbs (may substitute 1 c. Pepperidge Farm stuffing)
- 2 cans mushroom soup
- 1 c. mayonnaise
- 1/4 c. milk
- 1 Tbsp. lemon juice
- Saute celery, onion and mushrooms in butter.
- Cook rice according to directions on package.
- Mix together celery, onions, mushrooms and rice.
- Mix together soup, mayonnaise, milk and lemon juice.
- Layer in 9 x 13-inch pan:
- rice, chicken, sauce, cheese and breadcrumbs or sliced almonds.
