Pork Chops With Plum Sauce

- 1 tablespoon olive oil
- 3 fresh plums
- 1/2 cup port wine
- 2 teaspoons candied ginger, paste
- 1/2 cup quinoa
- 1 cup water
- 2 tablespoons toasted pine nuts (optional)
- Slice one plum into quarters, slice the other two into thin pieces.
