Low-Fat Enchiladas(No Meat, Bean Filled)
- 1 Tbsp. oil
- 1 Tbsp. chili powder
- 1 1/2 Tbsp. flour
- 1 1/2 c. water
- 1 tsp. vinegar
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. salt
- 1/4 tsp. oregano leaves
- 1/2 c. low-fat cottage cheese
- 3/4 c. no fat refried beans
- 1 c. grated low-fat cheese
- 1 medium onion, finely chopped
- 8 corn tortillas
- 1 c. mock sour cream
- 4 Tbsp. chopped green onions
- To make sauce, heat oil, chili powder and flour in a small saucepan to make a paste.
- Add water gradually; stir in vinegar, garlic powder, onion powder, salt and oregano.
- Bring to a boil, then lower heat and simmer 3 minutes.
