Chicken And Pasta Toss(A Salad)
- 1 1/2 c. rotini (corkscrew macaroni)
- 2 c. shredded fresh spinach
- 1 1/2 c. diced, cooked chicken (8 oz.)
- 8 cherry tomatoes, halved or sliced salad tomatoes
- 1 c. sliced, fresh mushrooms
- 1/4 c. shredded Parmesan cheese (1 oz.)
- 1/3 c. olive oil
- 3 Tbsp. Dijon mustard
- 3 Tbsp. water
- 1 tsp. lemon juice
- 1/4 tsp. garlic salt
- 1/8 tsp. pepper
- Cook macaroni according to package directions; drain.
- Rinse under cold running water; drain.
- Combine pasta, spinach, chicken, tomatoes, mushrooms and cheese in a medium salad bowl.
- Whisk together oil, mustard, lemon juice, garlic salt, 3 tablespoons water and 1/8 teaspoon pepper until smooth.
- Pour over pasta mixture; toss lightly.
- Serve immediately with hot French bread. Serves 4.
