Dinner Rolls

  1. Prepare potato; in a large bowl, sprinkle yeast in warm water. In separate bowl, blend egg and sugar, add potato, milk, butter and salt; add to yeast mixture.
  2. Thoroughly beat in two cups flour. Gradually add remaining flour 1/2 cup at a time.
  3. Turn out onto lightly floured surface and knead until smooth and satiny (about eight minutes).
  4. Put into lightly greased bowl and cover tightly with plastic wrap; allow to double in bulk (about 1 to 1 1/2 hours).
  5. Cut dough in 16 to 24 pieces for forming.
  6. Set formed rolls on greased baking sheet and allow to rise 30 to 40 minutes. Bake at 400u0b0 for 12 to 16 minutes, brush with melted butter.
