Gloucestershire Pie
- 1 lb. lean lamb, cooked and sliced
- 1 lb. onions, thinly sliced
- 1 lb. cooking apples, thinly sliced
- 2 oz. butter
- pinch of rosemary and nutmeg
- 1/2 pint rich gravy
- 1/2 - 3/4 lb. potatoes, diced
- 1/2 - 3/4 lb. swede, diced (rutabaga, swedish turnip)
- salt and pepper
- Set oven to 375u0b0.
- Put onions and apples in a pan and cover with water.
- Boil for 5 minutes.
- Drain well.
- Meanwhile boil swede for 10 minutes, then add potato and cook until both are soft.
- Drain well and mash together until smooth.
- Grease an ovenproof dish with the butter.
- Place layers of meat, onion and apple in the dish, seasoning and sprinkling each layer with herbs as you fill up the dish.
- Pour in the gravy and top with the mashed potato and swede mixture.
- Dot top with butter and bake uncovered for 3/4 to 1 hour.
- Serve with a green vegetable. Serves 4.
