Chicken Cacciatore
- 4 Cloves Garlic, chopped
- 1-2 lbs. Chicken Breasts (Boneless, Skinless)
- 2 Tbsp. Olive Oil
- 2 Cloves Garlic, chopped
- 2 Green peppers (Cut in strips)
- 2 C. Mushrooms (Cut)
- 1 c. Celery, chopped
- 1/2 c. Red Onion (Sliced)
- 2 tsp. Oregano
- 2 tsp. Sweet Basil
- 1/4 c. Parsley (Fresh is best if possible)
- Salt & Pepper to Taste
- Red Pepper is good if a little spice is desired
- 28 oz. Can Whole Tomatoes (Cut)
- 6 oz. Can Tomato Paste
- 1. In a large deep skillet brown chicken and the first
- 4 cloves of garlic in the olive oil, then remove
- chicken.
- 2. Add the last 2 cloves of garlic, peppers, mushrooms,
- celery, onion, oregano, sweet basil, parsley, salt,
- pepper, and red pepper (if desired), then brown.
- 3. Add the whole tomatoes, paste, and chicken. Bring to a
- vigorous simmer.
