Couscous Salad

  1. Bring the water to a boil in a small saucepan.
  2. Pour in the couscous.
  3. Cover the pan and remove from the heat.
  4. Let stand for 5 minutes.
  5. Uncover the pan and stir the couscous right away with a fork.
  6. (If the grains do not separate, fluff them gently with your fingers.)
  7. Transfer the couscous to a bowl and stir in the remaining ingredients.
  8. Season the salad to taste with more lemon juice, salt and pepper.
