Breakfast Casserole
- 12 ounces breakfast sausage links
- 6 English muffins, cut into 1-inch cubes
- 1/4 cup butter, melted
- 1 cup cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/2 cup onion, chopped
- 1/2 cup red pepper, chopped
- 12 eggs
- 2 cups milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup bacon bits
- Cook sausage and cut into 1/4" slices.
- Place English muffin pieces into a greased 9 x 13 baking dish.
- Drizzle melted butter over muffin pieces.
- Layer sausage, cheese, onion and red pepper on the muffins.
- In a large bowl, combine the eggs, milk, salt and pepper and pour over the cheese mix.
- Sprinkle bacon bits on top of everything, cover and refrigerate overnight.
- Remove from refrigerator and let it sit for 30 minutes prior to baking.
- Uncover and bake at 350 for 45-50 minutes or until a knife inserted in the middle comes out clean.
- Let stand 5 minutes and then serve.
