Easy Minestone Soup
- 1 lb. ground beef
- 1 lb. sweet Italian sausage, cut into pieces
- 1 or 2 cloves garlic, chopped
- 1 (28 oz.) or 2 (1 lb.) cans tomatoes, undrained
- 1 (16 oz.) can kidney beans, undrained
- 1 (12 oz.) can whole kernel corn, undrained
- 1 c. sliced celery
- 1 c. shredded cabbage
- 2 c. sliced zucchini
- 1 c. uncooked pasta
- 2 c. water
- 1/2 c. dry red wine or water
- 2 heaping tsp. instant beef bouillon
- 1 tsp. salt
- 1 1/2 tsp. Italian herb seasoning
- 1 chopped green pepper
- Cook and stir ground beef, sausage, onion and garlic in heavy pan until meat is browned.
- Drain.
- Stir in tomatoes, kidney beans, corn and remaining ingredients except pasta.
- Cook and stir about 30 minutes.
- Add pasta and cook until it's tender.
- Serve with Parmesan cheese.
