Chicken Bake
- 2 c. cooked chicken (bite-size pieces)
- 1 c. cooked frozen peas
- 2 pimientos, diced
- 1 (3 or 4 oz.) can mushroom (stems and pieces, including juices)
- 2 Tbsp. butter
- 1/4 c. flour
- 3 c. milk
- chicken broth or half and half
- salt and pepper to season
- baking powder biscuits
- stuffed olives
- Melt butter; blend in flour.
- Add milk, chicken broth or half and half.
- Cook until thick.
- Add the chicken mixture (chicken, peas, pimientos and mushrooms); season to taste with salt and pepper.
- Pour into a large shallow baking dish.
- Cover top with 1 1/2 inch baking powder biscuits, press a slice of stuffed olive in center of each and bake at 450u0b0 for 12 to 18 minutes or until biscuits are done.
