Sweet Potato Casserole With Praline Topping
- 3 eggs
- 4 c. mashed sweet potatoes
- 2/3 c. granulated sugar
- 2/3 c. margarine, melted
- 1/3 c. evaporated milk
- 1/2 tsp. nutmeg
- 1/2 tsp. allspice
- 1 c. packed brown sugar
- 1/3 c. flour
- 1 c. chopped pecans
- 1/3 c. margarine
- 1 tsp. vanilla
- Mix until well blended the first 7 ingredients.
- Heat oven to 350u0b0.
- Grease a shallow baking pan.
- Beat eggs in a large bowl. Stir in potatoes until blended.
- Add remaining ingredients and mix well.
- Spread evenly in dish.
- Mix sugar, flour and nuts in a medium-size bowl.
- Work in butter with hands until well blended. Sprinkle on potato mixture evenly.
- Bake for 60 or 70 minutes, until topping is browned and bubbling.
- Makes 12 servings.
