Pineapple Cheese Dessert(Diabetic)

  1. Crush graham crackers into fine crumbs, reserving 3 tablespoons for topping.
  2. Combine crumbs and margarine; press evenly in an 11 x 7 x 1 1/2-inch pan or 9-inch square pan.
  3. Bake at 350u0b0 for 10 minutes.
  4. Remove from oven and cool.
  5. Dissolve gelatin in 1 cup boiling water.
  6. Combine cottage cheese, lemon juice, lemon rind, salt, pineapple and artificial sweetener in blender container; process until smooth.
  7. Add to gelatin; blend well.
  8. Chill until mixture is partially set.
  9. Pour into crust; chill until firm.
  10. Sprinkle with reserved crumbs.
  11. Garnish with thin peels of lemon.
  12. Yields 8 servings.
