Pineapple Cheese Dessert(Diabetic)
- 11 (2-inch) square graham crackers
- 1 Tbsp. melted margarine
- 2 envelopes dietetic lemon gelatin
- 1 1/2 c. cottage cheese
- 2 Tbsp. lemon juice
- grated rind of 1/2 lemon
- 1/4 tsp. salt
- 2 (8 1/2 oz.) cans dietetic pineapple tidbits
- artificial sweetener to equal 1/2 c. sugar
- Crush graham crackers into fine crumbs, reserving 3 tablespoons for topping.
- Combine crumbs and margarine; press evenly in an 11 x 7 x 1 1/2-inch pan or 9-inch square pan.
- Bake at 350u0b0 for 10 minutes.
- Remove from oven and cool.
- Dissolve gelatin in 1 cup boiling water.
- Combine cottage cheese, lemon juice, lemon rind, salt, pineapple and artificial sweetener in blender container; process until smooth.
- Add to gelatin; blend well.
- Chill until mixture is partially set.
- Pour into crust; chill until firm.
- Sprinkle with reserved crumbs.
- Garnish with thin peels of lemon.
- Yields 8 servings.
