No Fat Chocolate Cake

  1. Heat milk until barely simmering.
  2. Remove from heat and whisk in cocoa until thickened and smooth.
  3. Let stand 2 to 3 minutes, then add applesauce and vanilla.
  4. Mix flour, 1 1/4 cups sugar, soda, baking powder and salt.
  5. Beat egg whites until thick and foamy.
  6. Gradually beat in remaining 1/4 cup sugar until stiff peaks form.
  7. Pour cocoa mixture over flour.
  8. Stir just until blended.
  9. Gently fold in egg whites.
  10. Pour in prepared pan, sprayed with Pam.
  11. Bake at 350u0b0 until toothpick comes out clean.
