Fruited Raisin Muffins
- 2 c. fortified whole bran cereal
- 1 c. plain yogurt
- 1/2 c. skim milk
- 1/4 c. Egg Beaters or 1 egg
- 1 c. flour
- 1/3 c. packed light brown sugar
- 1 Tbsp. baking powder
- 1 tsp. cinnamon
- 1/2 c. cranberries or chopped apple
- 1/2 c. seedless raisins
- 1/4 c. margarine, melted
- Combine bran, yogurt, milk, butter and egg product; let stand for 5 minutes.
- In bowl, blend flour, sugar, baking powder and cinnamon; stir in bran mixture just until blended.
- Stir in cranberries and raisins.
- Spoon batter into 9 greased 3-inch muffin pan cups.*
- Bake at 400u0b0 for 20 to 25 minutes.
- Serve warm. *Twelve greased 2 1/2-inch muffin pan cups may be substituted. Bake at 400u0b0 for 18 to 20 minutes.
