Old Fashioned Banana Bread Pudding
- Bread Pudding
- 1/4 cup butter or 1/4 cup margarine
- 4 cups French bread (stale bread) or 4 cups sourdough bread, cubed (stale bread)
- 3 eggs
- 1/2 cup sugar
- 2 cups milk
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 2 teaspoons vanilla
- 1 cup banana, sliced
- Sauce
- 3 tablespoons butter or 3 tablespoons margarine
- 2 tablespoons sugar
- 1 tablespoon cornstarch
- 3/4 cup milk
- 1/4 cup light corn syrup
- 1 teaspoon vanilla
- heat oven to 375*F.
- in a 2-quart casserole melt 1/4 cup butter in oven for 4 to 6 minutes.
- stir in bread cubes.
- in medium bowl slightly beat eggs, stir in remaining pudding ingredients "except bananas".
- stir in bananas.
- pour over bread cubes, stir to coat.
- bake for 40 to 50 minutes or until a knife inserted near center comes out clean.
- meanwhile in a 1 quart saucepan melt 3 tablespoons butter over medium heat.
- stir in sugar and cornstarch, add remaining ingredients "except for vanilla".
- continue cooking, stirring occasionally until sauce come to a full boil, about 3 to 4 minutes.
- stir in vanilla.
- serve sauce over warm pudding.
