Ukrainian Red Cabbage - Kapusta
- 1/4 cup unsalted butter
- 2 large granny smith apples, cored and chopped
- 1 large onion, thinly sliced
- 2 lbs red cabbage, shredded
- 1/4 cup packed golden brown sugar
- 2 tablespoons cider vinegar
- 1 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1/8 teaspoon ground cloves
- 1/3 cup chicken stock
- 2 tablespoons black currant jam
- salt and pepper
- Melt the butter in a large saucepan over medium-high heat. Add the apples and the onion and saute until the onion is tender and translucent, approximately 8 minutes.
- Stir in cabbage and stir until wilted, approximately 8 minutes. Stir in the sugar, vinegar ,salt, cinnamon, allspice, and cloves. Cover and cook until the cabbage is tender, stirring occasionally, aproximately 10 minutes.
- Add the stock and jam and continue to cook uncovered for 5 minutes longer. Season with salt and pepper and serve. Delicious!
