Southwestern-Style Burgers
- 1 beaten egg
- 1/4 c. crushed tortillas
- 3 Tbsp. chopped green pepper
- 3/4 tsp. chili powder
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 lb. ground chicken (raw)
- 1 avocado, halved, seeded, peeled and sliced
- 4 oz. Monterey Jack cheese, sliced
- 4 kaiser rolls or hamburger buns, split
- lettuce leaves
- salsa
- In a medium bowl, combine egg, chips, green pepper, chili powder, salt and pepper.
- Add chicken; mix well.
- Shape into four 3/4-inch thick patties.
- Grill on an uncovered grill.
- Place patties directly over medium-hot coals; cook 15 to 18 minutes or until no longer pink, turning once.
- Top each patty with avocado slices and cheese.
- Grill 1 to 2 minutes more or until cheese is melted.
- To serve, place 1 lettuce leaf on bottom half of bun.
- Top with cooked patty and salsa.
