Parsley Meat Loaf
- 2 lb. ground chuck
- 1 1/4 c. soft breadcrumbs
- 1 c. chopped fresh parsley
- 3/4 c. chopped onion
- 1 egg, beaten
- 2 Tbsp. chopped green pepper
- 1 large clove garlic, minced
- 1/2 tsp. salt
- 1/2 tsp. dried whole thyme
- 1/2 tsp. freshly ground pepper
- 1/4 tsp. ground allspice
- 1/8 tsp. ground nutmeg
- 1/8 tsp. red pepper
- 3 bay leaves
- 1 Tbsp. catsup
- Combine all ingredients except bay leaves and catsup; stir well.
- Shape into a loaf and place in a 9 x 5 x 3-inch two-piece loaf pan with drain holes in the bottom.
- Arrange bay leaves on top.
- Bake at 350u0b0 for 1 hour and 20 to 25 minutes or until done. Remove from pan and discard bay leaves; spread catsup over meat loaf.
